Vegan Brownie Recipe

 

Every chocolate lover can attest to loving a rich, warm brownie. There really is nothing better than the fresh taste of gooey chocolate fresh out of the oven, especially when it’s cold outside!

But the sad truth is that most brownie recipes are chock full of sugar, butter, and other unhealthy, non-organic ingredients that aren’t great for your health. Luckily, since today is National Brownie Day, we are sharing our favorite vegan brownie recipe that’s a much better option for satisfying that sweet tooth. 

If you’re on the hunt for a classic brownie recipe made with pantry staples that’s healthier, guilt-free, and totally vegan, check this out:

Ingredients

  • 1 cup + 2 tbsp non-dairy milk of choice
  • 1/2 cup + 3 tbsp oil
  • 1 tbsp pure vanilla extract
  • 1 cup spelt, white, or gluten-free flour
  • 1 cup unsweetened cocoa powder
  • 1/4 tsp + 1/8 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup brown sugar, unrefined if desired
  • 1/3 cup white sugar, unrefined if desired, OR stevia baking blend
  • 2 tbsp cornstarch, or ground flax
  • 2/3 cup mini chocolate chips optional

Directions

  1. Start by whisking the first three ingredients (milk, oil, vanilla) and set aside. Preheat your oven to 330F. Grease a 9x13 pan (or 8x8 for thicker brownies), or line it with parchment paper.
  2. In a large mixing bowl, thoroughly combine all dry ingredients. Then, stir your wet ingredients into the dry.
  3. Pour the mixture into the pan and smooth it down. Bake the brownies for 16 minutes, or 24 minutes if using an 8x8 pan. 

*Note: The brownies might look a little underdone when they come out of the oven, but that’s normal! You should refrigerate them after trying one (or two!) so they firm up. They can always be warmed up in the microwave if that’s your desired taste!
